When I looked up recipes for fresh pasta dough, I saw that most of them called for only two ingredients; eggs and flour. So I cut down a simple pasta dough recipe to a yield of one serving. If you've got a hankering for fresh chewy pasta without leaving the comfort of your home, this recipe is for you.
1 medium sized egg
Sauce and garnish of your choosing (butter and basil pictured above)
Make a mountain of flour in a mixing bowl, create a well in the middle of the flour with your fingers and crack the egg inside it. With a fork, lightly beat the egg while slowly incorporating the flour around it. Once you've incorporated all the flour you will have a ball of dough. Knead the dough with the heels of your hands for about 10-15 minutes using your body weight, stretching not tearing, the dough. After kneading, seal the ball of dough with plastic wrap and set aside for about 30 minutes.
After the 30 minutes, dust a flat surface with some extra flour and roll out the dough thinly with a rolling pin or a clean wine bottle (or any cylindrical item you have around the kitchen). Once your dough is rolled out thinly, cut the dough into strips as wide or thin as you want, or you can cut shapes if you're feeling sassy.
Now you can bring a pot of water to a boil, add a few pinches of salt and throw your homemade pasta in. Boil the pasta for 3-4 minutes. Drain the pasta and toss in a bowl with your favorite sauce. Here I used butter, fresh basil and salt and pepper to taste.
